Ingredients

  • 120 g lean beef strips (sirloin or flank)
  • 75 g dry brown rice
  • 200 g mixed stir-fry vegetables
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 clove garlic
  • 1 small piece piece ginger

Instructions

Begin by cooking the brown rice according to the package instructions. This should result in about 1 cup of cooked brown rice. Set aside when done.

While the rice is cooking, mince the garlic and grate the ginger into a fine paste.

Heat a large non-stick frying pan or wok over medium-high heat. Add the sesame oil and swirl to coat the pan.

Add the minced garlic and grated ginger to the pan; sauté for about 30 seconds until fragrant.

Increase the heat to high and add the beef strips. Stir-fry for 3-4 minutes until the beef is browned and cooked through.

Add the mixed stir-fry vegetables to the pan with the beef, and toss them well. Stir-fry for about 3-5 minutes until vegetables are tender-crisp.

Pour in the soy sauce over the stir-fry, and mix well to coat all the ingredients. Cook for an additional 1-2 minutes.

Serve the beef and vegetable stir-fry over a bed of the cooked brown rice.
