Peel and finely chop 1 clove of garlic and grate 1 teaspoon of fresh ginger.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the chopped garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant.
Add the lean beef strips to the skillet and stir-fry for 3-4 minutes, or until browned and cooked through. Remove the beef from the skillet and set aside.
In the same skillet, add 1 teaspoon of sesame oil and the mixed stir-fry vegetables. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Return the cooked beef to the skillet with the vegetables. Add 1 tablespoon of low-sodium soy sauce and stir everything together until well combined and heated through, about 2 minutes.
Serve the stir-fried beef and vegetables over the ¾ cup of cooked brown rice. Enjoy your meal!
