Vegetarian Bibimbap with Brown Rice

Ingredients

  • 180 g Brown rice
  • 125 g Firm tofu
  • 50 g Spinach
  • 0.5 item Zucchini
  • 0.5 item Carrot
  • 50 g Bean sprouts
  • 1 tbsp Gochujang
  • 0.5 tbsp Sesame oil
  • 1 tsp Sesame seeds
  • 1 tsp Salt
  • 0.5 tsp Pepper

Instructions

Cook 360 g of brown rice according to the package instructions and set aside. Use 180 g per serving.

Drain and pat dry the firm tofu; slice it into thin pieces. Pan-sear tofu in a non-stick pan until golden on each side. Once done, set aside and keep warm.

Blanch 50 g of spinach, then season with a pinch of salt. Set aside.

Julienne half a zucchini and saute in a pan with a little oil until tender. Set aside.

Julienne half a carrot and saute in a pan with a little oil until tender. Set aside.

Blanch 50 g of bean sprouts and set aside.

In a serving bowl, place 180 g of cooked brown rice. Arrange the spinach, zucchini, carrot, bean sprouts, and tofu over the rice, in separate sections.

Drizzle 0.5 tbsp sesame oil over the top and add 1 tbsp of gochujang on the side. Sprinkle 1 tsp sesame seeds on top to finish.

Mix everything together just before eating, adjusting seasoning with additional salt and pepper if needed.
