A cozy, restaurant-style lentil curry that balances earthy brown lentils, bright tomatoes and spinach, and a silky kiss of light coconut milk. Toasted brown rice adds a nutty counterpoint while a robust curry-spice base (curry powder, cumin, ginger and garlic) creates deep savory layers—comforting, fragrant and unexpectedly elegant for a weeknight.
Measure and rinse: Rinse 1 1/2 cups dry brown lentils under cold water and pick out any small stones or debris. Rinsing removes dust and ensures even cooking.
Prep aromatics and liquids: Finely chop 1 large onion, mince 4 garlic cloves and grate 1 1/2 tablespoons fresh ginger. Open the canned diced tomatoes and the light coconut milk. Having these ready keeps the cooking process smooth and prevents burning the aromatics.
Toast the rice for nuttiness: In a medium saucepan, heat 1 teaspoon oil over medium heat.
