Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
Add the lean beef strips and stir-fry for 3-4 minutes until browned. Remove the beef from the pan and set aside.
In the same pan, add the sliced onion, minced garlic, and minced ginger. Stir-fry for 1-2 minutes until fragrant.
Add the sliced red and yellow bell peppers and sugar snap peas to the pan. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
Return the beef to the pan and add the 1.5 tablespoons of low-sodium soy sauce and 1 teaspoon of sesame oil. Stir well to combine all ingredients.
Season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Stir everything together and let it cook for an additional 1-2 minutes to ensure flavors are well combined.
Serve the stir-fry hot over 1 cup of cooked brown rice. Enjoy your meal!
