  • 1 cup Roasted chickpeas
  • 100 g Quinoa
  • 100 g Roasted sweet potato cubes
  • 2 cups Mixed greens
  • 3 tbsp Tahini dressing
  • 1 tbsp Olive oil
  • to taste amount Salt
  • to taste amount Black pepper

Instructions

Prepare the quinoa according to package instructions, ensuring it's fluffy and cooked through. Set aside 100g for each serving.

In a skillet over medium heat, add 1 tbsp of olive oil. Add the roasted chickpeas to the pan, season with salt and black pepper, and sauté for about 5 minutes until they are slightly crispy. Remove from heat.

Arrange 2 cups of mixed greens at the bottom of a bowl.

Layer 100g of cooked quinoa on one side of the bowl.

Add 100g of roasted sweet potato cubes alongside the quinoa.

Top the bowl with the crispy roasted chickpeas.

Drizzle 3 tbsp of tahini dressing evenly over the assembled bowl.
