In a large mixing bowl, combine 2 cups of oats and 2 cups of almond milk.
Stir in 1/2 cup of mixed nuts to the oats and almond milk mixture.
Add 2 cups of mixed fruits to the mixture. You can use fresh fruits like berries, or dried fruits such as raisins and apricots.
For added sweetness, stir in 2 tablespoons of honey (optional).
Add 1 teaspoon of vanilla extract for additional flavor (optional).
Sprinkle a pinch of salt (about 1/8 teaspoon) to enhance the flavor (optional).
Mix all the ingredients thoroughly until well combined.
Divide the mixture evenly into serving jars or bowls. Cover and refrigerate overnight (or for at least 6 hours) to allow the oats to soften and absorb the flavors.
In the morning, give the overnight oats a good stir and add more almond milk if desired for a looser consistency.
