Ingredients

  • 2 pieces Eggs
  • 1 piece Egg white
  • 30 g Spinach
  • 50 g Mushrooms
  • 30 g Feta cheese
  • 1 slice Whole-Grain Toast
  • 1 tbsp Olive oil
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions

Wash the spinach and mushrooms thoroughly. Slice mushrooms thinly.

In a small pan, heat 1/2 tablespoon of olive oil over medium heat. Add the mushrooms and sauté until they are brown and tender, about 5 minutes. Add the spinach and cook for another 2 minutes until wilted. Set aside.

In a bowl, whisk together the eggs and egg white with salt and black pepper until well combined and fluffy.

In a non-stick frying pan, heat the remaining 1/2 tablespoon of olive oil over medium heat. Pour the egg mixture into the pan and cook until the edges begin to set, about 2 minutes.

Add the sautéed mushrooms and spinach to one half of the omelette. Crumble the feta cheese on top of the vegetables.

Using a spatula, gently fold the omelette in half over the filling. Continue cooking for another 2-3 minutes until the omelette is cooked through and the cheese is slightly melted.

While the omelette cooks, toast the slice of whole-grain bread to your liking.

Serve the omelette with the toasted bread on the side. Enjoy your meal!
