Ingredients

  • 150 g chicken breast
  • 2 tbsp olive oil
  • 0.25 cup white wine
  • 1 lemon lemon juice
  • 1 tbsp capers
  • to taste for garnish parsley

Instructions

Pound the chicken breast to an even thickness of about 1/2 inch for even cooking. Season both sides with salt and pepper.

Heat 1 tablespoon of olive oil in a pan over medium-high heat. Add the chicken breast and sear each side until golden brown, about 4-5 minutes per side, until cooked through. Remove the chicken from the pan and set aside.

Add the remaining tablespoon of olive oil to the pan. Stir in the capers, and sauté for about 1 minute.

Carefully add the white wine to the pan, scraping up any brown bits from the bottom. Allow the wine to reduce by half, which should take about 2 minutes.

Add the lemon juice to the pan and stir well. Return the chicken to the pan and let it simmer in the sauce for another 2-3 minutes, ensuring it is coated well.

Transfer the chicken to a serving plate, pour the sauce over the top, and garnish with chopped parsley. Serve immediately.
