Ingredients

  • 2 pieces chicken breast
  • 2 medium carrots
  • 1 cup frozen peas
  • 1/2 cup unsalted butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cup chicken broth
  • 2/3 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 sheets refrigerated pie crusts

Instructions

Preheat your oven to 425°F (220°C).

Dice the chicken breasts and carrots into bite-sized pieces.

In a large saucepan, melt the butter over medium heat. Stir in the flour until well combined, then gradually whisk in the chicken broth and milk. Add salt, pepper, and thyme, and stir constantly until the mixture thickens (about 5-7 minutes).

Add the diced chicken and carrots to the saucepan, along with the peas. Stir everything together and let it cook for an additional 5 minutes.

Place one pie crust onto the bottom of a pie dish. Pour the chicken and vegetable filling into the pie crust.

Cover with the second pie crust. Seal the edges by pressing with a fork and cut slits on the top to allow steam to escape.

Bake in the preheated oven for 30 to 35 minutes, or until the crust is golden brown. Let it cool for a few minutes before serving.
