Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the lean beef strips to the skillet and season with a pinch of salt and black pepper. Stir-fry for about 3-4 minutes until the beef is browned and cooked through. Remove the beef from the skillet and set aside.
In the same skillet, add the mixed stir-fry vegetables. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
Return the cooked beef to the skillet with the vegetables. Add the 2 tablespoons of light stir-fry sauce and stir to combine everything well.
Cook for an additional 2-3 minutes to heat the beef and sauce through thoroughly.
Serve the stir-fried beef and vegetables over the cooked brown rice. Enjoy your meal!
