Drain and rinse the chickpeas in a colander under cold water to remove excess sodium and any preservatives.
In a small bowl, combine tahini, lemon juice, 1 clove of minced garlic, and 2 tablespoons of olive oil. Whisk until smooth to create the dressing. If too thick, add a little water to reach the desired consistency. Add salt and pepper to taste.
In a large mixing bowl, toss the chickpeas with 1 tablespoon olive oil, salt, pepper, and the remaining clove of minced garlic. Mix until the chickpeas are well coated.
Gently fold in the assorted roasted vegetables into the seasoned chickpeas. Stir until well combined.
Chop fresh parsley finely and sprinkle over the chickpeas and roasted vegetable mixture.
Drizzle the tahini-lemon dressing over the chickpea and vegetable mixture, and gently toss to combine.
Divide the finished dish into bowls or plates and serve immediately. Adjust salt and pepper if needed before serving.
