In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.
Add the lean beef strips to the skillet and stir-fry for 3-5 minutes until they are browned and cooked through. Remove beef from the skillet and set aside.
In the same skillet, add the stir-fry vegetables (broccoli, bell pepper, and carrot) and stir-fry for 5 minutes until they are tender-crisp.
Return the cooked beef to the skillet with the vegetables. Add 2 tablespoons of soy-ginger sauce and stir well to combine and coat the beef and vegetables evenly.
Season the stir-fry with salt and black pepper to taste. Stir everything well to combine.
Serve the beef and vegetable stir-fry hot over a bed of cooked brown rice.
