Ingredients

  • 1.5 lb shrimp, peeled & deveined
  • 8 units small corn tortillas
  • 3 cups shredded cabbage
  • 0.5 cup plain yogurt
  • 1 unit lime
  • 0.25 cup cilantro, chopped
  • 1 tbsp chili powder
  • 2 tbsp olive oil
  • to taste n/a salt
  • to taste n/a black pepper

Instructions

Prepare the Lime Crema by mixing the plain yogurt with the juice of half a lime. Season with salt and pepper to taste, and set aside.

In a bowl, toss the shrimp with the chili powder, 1 tablespoon of olive oil, salt, and pepper until well coated.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they are pink and cooked through. Remove from heat and set aside.

In a large bowl, combine the shredded cabbage, chopped cilantro, and the juice from the remaining half of the lime. Add salt and pepper to taste, and toss well to combine.

Briefly warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until soft and pliable.

Assemble the tacos by placing a generous amount of cabbage slaw on each tortilla, followed by the cooked shrimp. Drizzle with the Lime Crema before serving.
