Ingredients

  • 6 oz salmon fillet
  • 1 medium sweet potato, cubed
  • 1 cup Brussels sprouts, halved
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 piece lemon wedge

Preheat the oven to 400°F (200°C).

In a large mixing bowl, toss the sweet potato cubes and Brussels sprouts with 1/2 tablespoon of olive oil, 1/2 teaspoon of garlic powder, salt, and pepper to taste. Ensure the vegetables are evenly coated with the seasoning.

Spread the seasoned sweet potato cubes and Brussels sprouts in a single layer on a baking sheet.

Place the baking sheet in the preheated oven and roast the vegetables for 20 minutes.

Meanwhile, rub the salmon fillet with the remaining 1/2 tablespoon of olive oil, 1/2 teaspoon of garlic powder, salt, and pepper to taste.

After 20 minutes of roasting the vegetables, remove the baking sheet from the oven and make space for the salmon fillet. Place the salmon fillet on the baking sheet alongside the vegetables.

Return the baking sheet to the oven and bake for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Once done, remove the baking sheet from the oven. Squeeze the lemon wedge over the salmon and vegetables for added flavor.

Serve the baked salmon with the roasted Brussels sprouts and sweet potato immediately.
