In a medium saucepan, bring 1 cup of water to a boil. Add 1/2 cup rolled oats and reduce the heat to low. Cook, stirring occasionally, for about 5 minutes, or until the oats have absorbed the water and are tender.
In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the cherry tomatoes and cook until they start to blister, about 3 minutes. Remove them from the skillet and set aside.
In the same skillet, add the fresh spinach and cook until wilted, about 2 minutes. Season with salt and black pepper. Remove from the skillet and set aside.
In the same skillet, add a little more olive oil if necessary, and crack the eggs into the skillet. Fry them until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and black pepper.
To assemble, place the cooked oats in a bowl. Top with sautéed spinach, blistered cherry tomatoes, and fried eggs. Sprinkle grated Parmesan over the top.
