Savory Oats with Fried Eggs, Sautéed Spinach & Cherry Tomatoes

Ingredients

  • 0.5 cup Rolled oats
  • 1 cup Water
  • 2 tbsp Olive oil
  • 2 units Large eggs
  • 1 cup Fresh spinach
  • 1 handful Cherry tomatoes
  • 1 tbsp Grated Parmesan cheese

Instructions

In a small saucepan, bring 1 cup of water to a boil. Add the 1/2 cup of rolled oats and a pinch of salt. Reduce heat to a simmer, cover, and cook for about 5-7 minutes, or until oats are tender and have absorbed most of the water. Stir occasionally.

While the oats are cooking, heat 1 tbsp of olive oil in a skillet over medium heat. Add a handful of cherry tomatoes and sauté for about 3-4 minutes, until they start to blister.

Add 1 cup of fresh spinach to the skillet with the tomatoes. Season with salt and pepper to taste. Sauté until the spinach is wilted, about 2 minutes. Transfer the sautéed spinach and tomatoes to a plate and keep warm.

In the same skillet, add the remaining 1 tbsp of olive oil and heat over medium heat. Crack the two eggs into the skillet and fry until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.

Once the oats are cooked, spoon them into a serving bowl. Top with the sautéed spinach and tomatoes.

Place the fried eggs on top of the oats and vegetables. Sprinkle with 1 tbsp of grated Parmesan cheese.

Serve immediately, and enjoy your hearty and healthy breakfast!
