Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until well combined.
Heat 1/2 tsp of olive oil in a non-stick skillet over medium heat. Add the sliced mushrooms and sauté for about 3-4 minutes until they release their moisture and become golden brown.
Add the fresh spinach to the mushrooms in the pan and cook until wilted, about 1-2 minutes.
Remove the spinach and mushrooms from the pan and set them aside.
Add the remaining 1/2 tsp of olive oil to the pan and pour in the whisked eggs. Let it cook for about 1 minute until the edges start to set.
Evenly distribute the cooked mushrooms and spinach over one half of the omelette.
Cook for an additional 2-3 minutes, then fold the empty half of the omelette over the filling using a spatula. Cook for another minute until the eggs are fully set.
Toast the whole-grain bread to your preferred level of crispiness.
Mash the avocado and spread it over the toasted bread.
Serve the omelette alongside the avocado toast. Add additional salt and pepper to taste.
