Cut the chicken breast into thin strips and season with a pinch of salt and pepper.
Mince the garlic cloves and grate the ginger.
Heat a large non-stick skillet or wok over medium-high heat and add 1 tablespoon of oil.
Add the chicken strips to the skillet and stir-fry for about 4-5 minutes, or until they are cooked through and no longer pink. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant.
Add the mixed stir-fry vegetables to the skillet and cook for about 3-4 minutes, or until they are tender-crisp.
Return the cooked chicken to the skillet and mix well with the vegetables.
Add the cooked brown rice, low-sodium soy sauce, and sesame oil to the skillet. Stir well to combine all ingredients.
Cook for an additional 2 minutes to heat everything through, then remove from the heat.
Taste and adjust seasoning with more soy sauce, salt, or pepper if needed. Serve hot.
