In a pan over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Flip occasionally to ensure even cooking. Once done, remove from the pan and place on a paper towel to drain excess fat.
While the bacon is cooking, bring a small pot of water to a boil. Carefully add the eggs and boil for 9-10 minutes for hard-boiled eggs. Once cooked, transfer the eggs to a bowl of ice water to cool. This will make them easier to peel.
Once the eggs are cool, peel them and chop them into small pieces. Set aside.
In a mixing bowl, combine the mayonnaise and cayenne pepper. Mix until well combined. Taste and adjust for seasoning if needed.
Add the chopped eggs, crumbled bacon (reserve a piece for garnish if desired), and chopped chives to the mayo mixture. Stir gently to combine all ingredients without mashing the eggs too much.
Serve the spicy bacon & egg mayonnaise salad in a bowl or as a filling for a sandwich or on crackers. If desired, garnish with the reserved piece of bacon and a sprinkle of additional chives on top.
