Wash and dry the mixed greens thoroughly. Place them in a large salad bowl.
Slice the cured salami into thin strips and add to the salad bowl.
Cut the fresh mozzarella or bocconcini into bite-sized pieces and add to the bowl.
Rinse and drain the chickpeas. Add them to the salad bowl.
Halve the cherry tomatoes and add to the bowl.
Peel the cucumber, cut it into quarter slices, and add to the salad bowl.
Drizzle the olive oil & red wine vinaigrette over the salad. Add salt and black pepper to taste.
Toss the salad gently to combine all the ingredients well.
Serve the salad with a whole-grain roll on the side.
