Cook the brown rice following the package instructions. Typically, add 75 g of rice to a pot with 150 ml of water. Bring to a boil, then cover and simmer on low heat for about 25-30 minutes until the water is absorbed and the rice is tender.
While the rice is cooking, marinate the beef strips in a mixture of 1 tablespoon soy sauce, 1/2 tablespoon sesame oil, grated ginger, and minced garlic. Set aside for at least 10 minutes.
Heat the remaining sesame oil in a large skillet or wok over medium-high heat.
Add the marinated beef strips to the skillet and stir-fry for 3-4 minutes until browned and cooked through. Remove the beef from the pan and set aside.
In the same skillet, add the mixed vegetables and stir-fry for 5-7 minutes until they are tender-crisp. Season with a pinch of salt and pepper.
Return the beef to the skillet with the vegetables. Add the remaining tablespoon of soy sauce and stir everything together for another 2-3 minutes until heated through.
Serve the beef and vegetable stir-fry over the cooked brown rice. Enjoy your meal!
