  • 4 pieces eggs
  • 1 medium tomato
  • 10 leaves fresh basil leaves
  • 50 grams Parmesan cheese
  • 150 grams mixed berries
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Preheat your oven to 375°F (190°C).

Crack the eggs into a large bowl, add the salt and black pepper, and beat well with a whisk.

Finely chop the tomato and basil leaves. Grate the Parmesan cheese.

In an oven-proof skillet, heat the olive oil over medium heat. Add the chopped tomatoes and cook for about 3-4 minutes until they soften.

Add the chopped basil to the tomatoes and stir briefly.

Pour the beaten eggs over the tomato and basil mixture in the skillet. Cook for about 2-3 minutes until the edges start to set.

Sprinkle the grated Parmesan evenly over the eggs.

Transfer the skillet to the preheated oven and bake for about 10-12 minutes, or until the frittata is puffed up and the center is just set.

While the frittata bakes, rinse the mixed berries under cold water and drain well.

Once the frittata is done, remove from the oven and let it cool slightly before slicing.

Serve slices of frittata with the mixed berries on the side.
