Crack the eggs into a bowl, add salt and pepper, and whisk until well combined.
Heat half the butter or oil in a non-stick skillet over medium heat. Add the sliced mushrooms and cook for about 3-4 minutes until softened.
Add the fresh spinach to the skillet with the mushrooms and cook until wilted, about 1-2 minutes. Remove the mixture from the skillet and set aside.
Use the remaining butter or oil to lightly grease the skillet. Pour the whisked eggs into the skillet.
Allow the eggs to cook on medium heat until the edges start to set, approximately 2-3 minutes.
Evenly distribute the spinach and mushroom mixture over one half of the omelette. Sprinkle the cheddar cheese on top of the spinach and mushrooms.
Carefully fold the other half of the omelette over the filling using a spatula. Cook for an additional 1-2 minutes until the cheese is melted and the omelette is fully set.
Meanwhile, toast the whole-grain bread slices in a toaster until golden brown.
Serve the omelette hot with the whole-grain toast on the side. Enjoy your meal!
