In a blender or food processor, combine 1 cup of oats, 1 ripe banana, and 2 large eggs.
Blend the mixture until smooth, creating a batter. If you prefer a slightly chunkier texture, blend just until combined.
Add 1/2 teaspoon of baking powder and 1/2 teaspoon of cinnamon to the batter in the blender. Blend again briefly to mix.
Heat a non-stick skillet over medium heat and lightly grease with oil or cooking spray.
Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes).
Flip the pancakes carefully and cook for another 2-3 minutes on the other side until golden brown.
Serve the pancakes warm, drizzled with maple syrup to taste. Enjoy!
