Start by boiling the new potatoes in salted water. Once they are tender (approximately 15 minutes), drain and set them aside to cool.
While the potatoes are boiling, trim the green beans and blanch them in boiling water for about 3 minutes, then immediately transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.
Prepare the vinaigrette by whisking together olive oil, mustard, lemon juice, salt, and black pepper in a small bowl.
Peel and quarter the hard-boiled egg.
Arrange the mixed greens on a large serving plate or bowl.
Slice the cooled potatoes and arrange them, along with the blanched green beans, canned tuna, quartered hard-boiled egg, and olives, over the mixed greens.
Drizzle the prepared vinaigrette over the salad and toss gently to combine, ensuring everything is well coated with the dressing.
