Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium-high heat.
Add the lean beef strips to the pan and stir-fry for about 3-4 minutes until they are browned and cooked through. Remove the beef from the pan and set aside.
In the same pan, add the minced garlic and grated ginger, and stir-fry for about 30 seconds until fragrant.
Add the vegetable mix to the pan, and stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
Return the beef to the pan, add the cooked brown rice, and pour in the soy sauce. Stir-fry everything together for another 2-3 minutes until heated through.
Garnish with chopped green onions before serving.
