Rinse 1 cup of brown rice under cold water. In a medium saucepan, add 2 cups of water and bring to a boil. Add the rice and a pinch of salt, cover, and reduce the heat to low. Cook for about 30 minutes or until the rice is tender and water is absorbed. Remove from heat and let it rest.
While the rice is cooking, heat 1 tablespoon of sesame oil in a large pan over medium-high heat. Add 500 g of beef strips to the pan, season with salt and pepper, and stir-fry until browned and cooked through, about 5-7 minutes. Remove beef from the pan and set aside.
In the same pan, add another tablespoon of sesame oil. Add 2 minced garlic cloves and sauté until fragrant, about 30 seconds.
Add 2 cups of mixed vegetables to the pan. Stir-fry for about 5 minutes or until they start to soften but still retain some crunch.
Return the cooked beef strips to the pan. Add 1/4 cup of soy sauce and toss everything together. Cook for an additional 2 minutes to let the flavors meld.
Fluff the cooked brown rice with a fork. Serve the beef and vegetable stir-fry over the rice. Enjoy your meal!
