  • 300 g chicken breast
  • 1 cup heavy cream
  • 1 tbsp tikka masala paste
  • 2 cups cauliflower rice
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp coriander powder
  • 2 tbsp fresh cilantro (optional, for garnish)

Instructions

Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the diced chicken breast to the pan, season with salt, pepper, and garlic powder, and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pan and set aside.

In the same pan, add the remaining 1 tablespoon of olive oil. Stir in the tikka masala paste and cook for about 1 minute until fragrant.

Lower the heat to medium and pour in the heavy cream, stirring constantly to create a smooth sauce. Add the coriander powder for extra flavor. Let it simmer for about 5 minutes.

Return the cooked chicken to the pan and coat it with the sauce. Let the chicken simmer in the sauce for an additional 10 minutes, ensuring it's cooked through and the flavors meld together.

While the chicken simmers, prepare the cauliflower rice by heating it in a separate pan over medium heat for about 5 minutes or until tender.

Serve the Keto Chicken Tikka Masala over a bed of cauliflower rice. Garnish with fresh cilantro if desired.
