Start by preparing the crust. Melt the butter in a small saucepan over low heat or in a microwave-safe bowl in the microwave.
Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a ziplock bag and crushing them with a rolling pin.
Mix the melted butter with the biscuit crumbs until fully combined.
Press the biscuit mixture firmly into the bottom of a serving dish to form an even crust layer. Refrigerate while you prepare the filling.
In a medium-sized mixing bowl, beat the cream cheese until smooth and creamy.
Add sugar and vanilla extract to the cream cheese, and continue to beat until well incorporated.
In a separate bowl, whip the heavy cream until it forms soft peaks.
Fold the whipped cream gently into the cream cheese mixture until well combined, being careful not to deflate the cream.
Remove the crust from the refrigerator and spread the cream cheese mixture evenly over it.
Drizzle honey over the top of the dessert for added sweetness and decoration.
Refrigerate for at least 1 hour to set before serving.
