Remove the casing from the chorizo sausage and crumble it into a medium-sized skillet.
Heat the skillet over medium heat and cook the chorizo for about 5-7 minutes, stirring often, until it is browned and cooked through.
While the chorizo is cooking, crack the eggs into a bowl. Add a pinch of salt and pepper, and whisk until well combined.
Once the chorizo is cooked, push it to one side of the skillet. Pour the beaten eggs into the empty side of the skillet and scramble them in the drippings from the chorizo for about 2-3 minutes until they are just set.
Combine the scrambled eggs with the chorizo in the skillet and mix well. Cook for another minute to ensure everything is evenly heated through.
While the chorizo and eggs are finishing, prepare the lettuce leaves by washing and drying them. These will serve as taco shells.
Slice the avocado into thin pieces and set aside.
To assemble the tacos, place the chorizo and egg mixture into the center of each lettuce leaf, top with slices of avocado, and season with additional salt and pepper if desired.
