In a large mixing bowl, combine the mixed salad greens, cooked quinoa, and halved cherry tomatoes.
Add the roasted sweet potato cubes and sliced grilled chicken breast to the salad mixture.
In a small bowl, whisk together 1 tablespoon of olive oil, 1 tablespoon of lemon juice, a pinch of salt, and black pepper to taste to make the dressing.
Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.
Crumble the feta cheese over the top of the salad.
Serve the salad immediately or refrigerate for up to an hour if you prefer a chilled salad.
