  • 1 medium ripe avocado
  • 2 slice bread slices
  • 2 large egg
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon butter

Instructions

Toast the bread slices until they are golden brown. You can use a toaster or an oven set at 350°F (175°C).

While the bread is toasting, cut the avocado in half, remove the seed, and scoop the flesh into a bowl. Add lemon juice, salt, and black pepper. Mash with a fork until you achieve a chunky consistency.

Heat the olive oil in a non-stick skillet over medium heat. Crack the eggs into the skillet, season with a pinch of salt and pepper, and cook until the whites are set but the yolks are still runny, about 2-3 minutes for sunny-side up. Alternatively, you can scramble the eggs if you prefer.

Spread butter over each slice of toasted bread.

Spread the mashed avocado mixture evenly over each slice of buttered toast.

Place one cooked egg on top of the avocado spread on each toast slice. Sprinkle with red pepper flakes if using.
