Vegetable Quesadilla

Ingredients

  • 4 units whole wheat tortillas
  • 2 cups mixed vegetables
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • to taste for serving sour cream
  • to taste optional salt
  • to taste optional black pepper

Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the mixed vegetables to the skillet. Season with salt and black pepper to taste, and sauté them for 5-7 minutes until they are soft and slightly caramelized.

Remove the vegetables from the skillet and set them aside.

Wipe the skillet clean and add the remaining 1 tablespoon of olive oil. Place one tortilla in the skillet, and sprinkle 1/4 cup of shredded cheese evenly over half of the tortilla.

Spread 1/2 cup of the sautéed vegetables on top of the cheese layer. Fold the tortilla in half, pressing down gently with a spatula.

Cook the quesadilla for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Remove from the skillet and repeat the process with the remaining tortillas, cheese, and vegetables.

Once all quesadillas are prepared, slice them into wedges and serve warm with a dollop of sour cream.
