Preheat a non-stick skillet over medium heat. Add the olive oil or butter and allow it to melt and begin to shimmer.
Add the sliced mushrooms to the skillet and sauté for 2-3 minutes until they are golden brown and tender.
Add the fresh spinach to the skillet with the mushrooms and continue sautéing for another 1-2 minutes until the spinach is wilted. Season with salt and pepper.
Crack the eggs into a bowl, season with a little salt and pepper, and beat them until well mixed.
Pour the beaten eggs into the skillet with the mushrooms and spinach. Gently stir with a spatula to evenly distribute the fillings, then allow the eggs to cook undisturbed for about 2 minutes until the edges start to set.
Once the edges have set, carefully flip the omelette to cook the other side for an additional 1-2 minutes until fully cooked.
Toast the slice of whole-grain bread in a toaster until golden brown.
Serve the omelette folded on a plate alongside the whole-grain toast. Optionally garnish the omelette with more pepper or a sprinkle of salt to taste.
