Preheat the oven to 200°C (400°F) and prepare a baking sheet lined with parchment paper.
Cut the chicken breast into bite-sized pieces, making sure to cut evenly for consistent cooking.
In three separate bowls, prepare the breading stations: 1) Place flour seasoned with salt, pepper, paprika, and garlic powder in the first bowl. 2) Beat the eggs in the second bowl. 3) Place bread crumbs in the third bowl.
Coat each piece of chicken in the flour mixture, shaking off excess. Next, dip it into the beaten eggs, and finally coat it with bread crumbs, pressing lightly to ensure they stick.
In a large skillet, heat oil over medium heat until hot (about 170°C/340°F).
Fry the chicken nuggets in batches for about 4-5 minutes per side or until golden brown and fully cooked, maintaining the oil temperature.
Once cooked, place the nuggets on a paper towel-lined plate to drain excess oil, then transfer to the prepared baking sheet.
Bake the nuggets in the preheated oven for an additional 10 minutes to ensure they are crispy and fully cooked through.
Serve hot with your favorite dipping sauce.
