Cut the lemon in half. Slice one half into thin rounds and squeeze the juice from the other half into a small bowl.
Arrange the salmon fillets on one half of the prepared baking sheet. Drizzle with 1 tbsp of olive oil and squeeze the lemon juice over them. Sprinkle with the rosemary or dill, salt, and black pepper. Place the lemon slices on top of each fillet.
Chop the broccoli into small florets, slice the carrots into thin sticks, and halve the baby potatoes. Toss them with the remaining 1 tbsp of olive oil, salt, and pepper in a large bowl until well coated.
Arrange the vegetables on the other half of the baking sheet, ensuring they are in a single layer for even roasting.
Bake everything in the preheated oven for 25-30 minutes, or until the vegetables are tender and the salmon is cooked through, flaking easily with a fork.
Remove from the oven and let cool slightly. Serve the salmon fillets with the roasted vegetables alongside.
