Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Place the bacon slices on the prepared baking sheet in a single layer. Bake for 10-12 minutes, or until crispy. Remove from the oven and place on paper towels to drain excess fat.
While the bacon is baking, heat olive oil in a nonstick skillet over medium heat. Add the spinach and sauté for 2-3 minutes until wilted. Remove from pan and set aside.
In the same skillet, crack the eggs and season them with salt and pepper. Cook the eggs sunny side up, about 3 minutes per side, or to your liking. Remove from heat.
Split and toast the English muffins in a toaster until golden brown.
To assemble each sandwich, place a slice of cheddar cheese on the bottom half of each English muffin. Top with 2 slices of bacon, followed by a portion of sautéed spinach, and then one egg. Cover with the top half of the muffin.
Place assembled sandwiches on a baking sheet and bake in the oven for 3-5 minutes, or until the cheese has melted.
Serve the sandwiches immediately while warm and enjoy.
