Ingredients

  • 1 cup quick polenta (prepared)
  • 2 pieces eggs
  • 20 g grated Parmesan
  • 1 tsp butter
  • 2 tbsp chives or parsley
  • to taste optional salt
  • to taste optional pepper

Instructions

Prepare the quick polenta as per the package instructions and set aside 1 cup for this recipe.

Fill a medium saucepan with about 3 inches of water and bring to a simmer over medium heat. Add a pinch of salt.

Crack each egg into a small bowl or cup, and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes, or until the whites are set and the yolks are still runny.

While the eggs are poaching, divide the prepared polenta between two serving plates. Sprinkle each with 10 g of grated Parmesan cheese and a touch of salt and pepper if desired.

Once the eggs are poached, use a slotted spoon to carefully remove them from the water, letting any excess water drip off. Place one poached egg on top of each polenta serving.

In a small pan, melt the teaspoon of butter over low heat. Pour the melted butter evenly over each portion of polenta and egg.

Garnish with chopped chives or parsley. Serve immediately.
