Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the lean ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 10 minutes. Season with salt and pepper to taste.
Drain and rinse the black beans. Add them to the skillet with the cooked ground beef. Stir in 1 cup of salsa and 1 cup of corn. Let it simmer for 5 minutes over low heat.
In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add the cooked long-grain rice, stirring to warm through. Mix in the juice of 1 lime and chopped cilantro. Season with 1/2 teaspoon of salt. Remove from heat.
Chop the lettuce into bite-size pieces. Cut the avocados in half, remove the pit, scoop out the flesh, and dice it.
Assemble the burrito bowls by placing a layer of cilantro-lime rice at the bottom of each bowl. Top with the beef and black bean mixture, then add a layer of chopped lettuce, diced avocado, and remaining corn. Drizzle with additional salsa as desired.
Garnish with extra cilantro and a squeeze of lime juice before serving.
