In a large bowl, combine the sliced chicken thighs with olive oil, shawarma spice, salt, and pepper. Mix well to coat the chicken.
Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook for 6-8 minutes on each side, or until fully cooked and browned. Remove from heat and let rest for a few minutes.
While the chicken is cooking, prepare the cauliflower tabbouleh. In a large bowl, combine the riced cauliflower, chopped parsley, chopped tomato, diced cucumber, lemon juice, salt, and pepper. Toss well to combine.
To prepare the tahini dressing, whisk together the tahini, a pinch of salt, pepper, and 2 tbsp of water until smooth and adjust the consistency if necessary by adding a bit more water.
Arrange the cauliflower tabbouleh in serving bowls. Slice the cooked chicken and place it on top of the tabbouleh.
Serve with pickled turnips, drizzled tahini dressing, and extra lemon wedges on the side if desired.
