In a small bowl, combine 2 tablespoons of olive oil, 1 teaspoon of thyme, and 1 teaspoon of rosemary. Add salt and pepper to taste.
Place the chicken breasts on a plate or shallow dish. Pour the olive oil and herb mixture over the chicken, ensuring both sides are evenly coated. Lay sliced lemon over the chicken.
Cover the dish and marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator for more flavor.
Preheat a grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
Place the marinated chicken breasts on the grill. Cook for 6-7 minutes on each side, or until the internal temperature of the chicken reaches 165°F (75°C), and the chicken is no longer pink in the center. Lemon slices can be grilled alongside for 1-2 minutes to enhance flavor.
While the chicken is grilling, prepare the broccoli by steaming 2 cups of broccoli until tender, about 5-7 minutes.
Once done, remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute within the chicken, making it more tender.
Serve the grilled lemon herb chicken with the steamed broccoli on the side. Garnish with grilled lemon slices if desired.
