In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat.
Add the ginger to the skillet and sauté for about 1 minute until fragrant.
Add the mixed bell peppers to the skillet and sauté for 3-4 minutes until they are slightly tender.
Push the bell peppers to one side of the skillet and add the remaining tablespoon of sesame oil to the empty space.
Crack the 2 eggs into the skillet and scramble them until fully cooked, about 2-3 minutes.
Once the eggs are cooked, mix them with the bell peppers in the skillet.
Add the cauliflower rice to the skillet and stir well to combine with the peppers and eggs.
Pour the soy sauce (or coconut aminos) over the mixture and stir to coat everything evenly, cooking for an additional 3-4 minutes until the cauliflower rice is heated through.
Remove from heat and serve hot, garnished with additional sesame seeds or chopped green onions if desired.
