Ingredients

  • 1 cup All-purpose flour
  • 1 tablespoon Sugar
  • 1 tablespoon Baking powder
  • 1 cup Milk
  • 1 large Egg
  • 2 tablespoons Butter for cooking
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract (optional)

Instructions

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, beat the egg and then whisk in the milk and vanilla extract. Mix the wet ingredients into the dry ingredients until just blended. Be careful not to over-mix; it's okay if there are lumps.

Heat a non-stick pan or griddle over medium heat and add 1 tablespoon of butter. When the butter has melted, pour 1/4 cup of the batter onto the pan for each pancake.

Cook until bubbles form on the surface of the pancake and the edges appear cooked, about 2 minutes. Flip and cook on the other side until golden brown, about 1-2 minutes more.

Repeat with the remaining batter, using the remaining tablespoon of butter as needed.

Serve the pancakes warm with maple syrup on top.
