Wash the zucchini and cherry tomatoes thoroughly. Slice the cherry tomatoes in half and set aside.
Using a spiralizer, create zucchini noodles (zoodles) from the zucchini. If you don't have a spiralizer, you can use a julienne peeler or slice the zucchini into thin strips manually.
Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
Add the zucchini noodles to the skillet and sauté for about 2-3 minutes, until they are slightly softened. Be sure not to overcook, as they should retain some crunch.
Season the zucchini noodles with salt and black pepper.
Add the pesto sauce to the skillet and toss the zucchini noodles until they are evenly coated with the sauce.
Add the halved cherry tomatoes to the skillet and toss gently to combine. Cook for an additional minute to warm them through.
Transfer the zucchini noodles to serving plates. Grate Parmesan cheese over the top of each serving before serving.
