In a large mixing bowl, combine the 200g flour, 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1 tablespoon of sugar. Mix well until all dry ingredients are thoroughly combined.
In another bowl, whisk the 2 eggs and then add 200ml of milk. Mix until combined.
Pour the wet mixture (eggs and milk) into the bowl with the dry ingredients. Stir until just combined. Avoid over-mixing; a few lumps are okay.
Heat a non-stick skillet or frying pan over medium heat. Add 1 tablespoon of oil or butter, allowing it to melt and coat the surface.
Ladle about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.
Remove the pancakes from the skillet and keep warm while you cook the remaining batter, adding more oil or butter as needed.
Serve the pancakes warm with a generous drizzle of maple syrup on top.
