Heat 1 tablespoon of olive oil in a non-stick pan over medium heat.
Add the cubed chicken breast to the pan, season with salt and pepper, and cook until browned on all sides, about 5-6 minutes.
Reduce the heat to low and add the tomato-based tikka sauce to the pan with the cooked chicken.
Simmer the chicken in the tikka sauce for about 10-15 minutes, or until the chicken is cooked through and the sauce thickens.
While the chicken is cooking, prepare the cucumber raita by combining yogurt, diced cucumber, finely chopped mint leaves, and a pinch of salt in a bowl. Mix well and set aside.
Warm the cooked basmati rice in a microwave or on the stove until heated through.
Serve the chicken tikka masala over the warm basmati rice with a side of cucumber raita. Garnish with additional mint leaves if desired.
