Wash and slice the zucchini, bell peppers, and eggplant into about 1/2-inch thick slices.
Preheat your grill to medium-high heat.
In a bowl, mix olive oil, chopped fresh herbs, salt, and black pepper.
Brush the vegetable slices with the herbed olive oil mixture.
Place the vegetables on the grill. Cook for about 5-7 minutes on each side until they are tender and have grill marks.
Remove from grill and arrange on a platter. Drizzle with remaining herbed olive oil before serving.
