Cut the paneer into 1-inch cubes, the bell peppers into similar size pieces, and zucchini into thick slices.
In a bowl, whisk together olive oil, lemon juice, cumin powder, paprika, salt, and pepper to create a marinade.
Add the paneer cubes, bell peppers, and zucchini slices to the marinade. Toss well to coat each piece evenly. Let them marinate for at least 10 minutes.
Preheat the grill or a grill pan over medium-high heat.
Thread the marinated paneer, bell peppers, and zucchini onto the soaked skewers, alternating between them for variety and color.
