Paneer and Vegetable Skewers

By emensah m

Total: 30 minutes
VegetarianGrillingAppetizer

Ingredients

  • 200 g Paneer
  • 100 g Bell peppers
  • 100 g Zucchini
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Cumin powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 8 pieces Wooden skewers

Instructions

1

Soak the wooden skewers in water for 15 minutes to prevent burning during grilling.

2

Cut the paneer into 1-inch cubes, the bell peppers into similar size pieces, and zucchini into thick slices.

3

In a bowl, whisk together olive oil, lemon juice, cumin powder, paprika, salt, and pepper to create a marinade.

4

Add the paneer cubes, bell peppers, and zucchini slices to the marinade. Toss well to coat each piece evenly. Let them marinate for at least 10 minutes.

5

Preheat the grill or a grill pan over medium-high heat.

6

Thread the marinated paneer, bell peppers, and zucchini onto the soaked skewers, alternating between them for variety and color.

7

Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the paneer is golden and the vegetables have grill marks. Baste with any remaining marinade while grilling.

8

Remove the skewers from the grill and serve hot with a squeeze of lemon or your favorite dip.
