Baked Herb-Crusted Salmon with Roasted Baby Potatoes and Steamed Green Beans

Ingredients

  • 180 g salmon fillet
  • 250 g baby potatoes
  • 100 g green beans
  • 1 tbsp olive oil
  • 2 tbsp dill
  • 2 tbsp parsley
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

Preheat your oven to 200°C (390°F).

Clean the baby potatoes and cut them into halves. Place them on a baking sheet, drizzle with half a tablespoon of olive oil, and season with a pinch of salt and pepper. Toss to coat evenly.

Roast the potatoes in the preheated oven for 25-30 minutes, until golden and tender.

Mix dill, parsley, and the juice of half a lemon in a small bowl. Season with a sprinkle of salt and black pepper.

Place the salmon fillet on a baking tray lined with baking paper. Brush with remaining olive oil and spread the herb mixture over the top of the salmon.

Bake the salmon in the oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The potatoes should be done around the same time.

While the salmon and potatoes are in the oven, bring a pot of water to a boil and add a pinch of salt. Add the green beans and steam for about 4-5 minutes until bright green and tender-crisp.

Plate the salmon with a serving of roasted potatoes and steamed green beans. Garnish with extra dill, parsley, and a lemon wedge if desired.
